Chicken & Cannellini Beans Soup

Do you know that soup is such a very healthy food not just for kids but also for adults? It doesn't just makes you warm and full but also more healthier. Unlike other way of cooking, soups retain the vitamins and minerals of cooked vegetables because you don't dispose of the water when you're done. That vitamin-packed water just becomes part of the savory and delicious broth it makes. Now I'm going to help you make your very own healthy soup!
It's just super easy! So give it a try!
INGREDIENTS:

2 tsp. olive oil
2 oz. thinly sliced spinach
1 tsp. ginger
1 tsp minced garlic
28 oz. low sodium chicken broth
2 cups water
15 oz. cannellini beans
2 lbs. roasted boneless chicken shredded
COOKING INSTRUCTIONS:
) Heat oil in over medium-high heat and add ginger and garlic stirring often until aromatic, about 30 seconds.
) Stir in chicken broth and water, increase heat to high, cover and bring to a boil.
) Add beans and chicken and cook, uncovered, stirring occasionally, until heated through, about 2 minutes.
) Add the sliced spinach, stir until wilted for about 2 min. and voila you're done. Serve hot and enjoy! (If wanted a little bit spicy you can add a pinch of pepper flakes)
NOTE: Left over can be refrigerated for up to 2 days.
